Bharwa Bhindi, also known as Stuffed Okra, is a popular North Indian dish made with tender okra, stuffed with a mouthwatering blend of spices, and cooked to perfection. The word "Bharwa" means "stuffed," and "Bhindi" refers to "okra" in Hindi. This dish is a delicious way to enjoy the natural flavors of okra while enhancing them with a savory spice mix. The result is a beautiful symphony of textures and tastes that you'll want to savor again and again.
Wash the okra thoroughly under running water, ensuring all dirt is removed.
Pat them dry with a clean kitchen towel or paper towel.
Let the okra air dry for 10-15 minutes to ensure no moisture remains.
Preparing the okra for stuffing:
Trim the top and bottom ends of each okra, being careful not to remove too much.
Carefully slit each okra lengthwise without cutting through completely. Set aside.
Mixing the stuffing:
In a small bowl, mix all the stuffing ingredients - coriander powder, coarsely ground fennel seeds, amchur, red chili powder, turmeric powder, garam masala, and salt.
Stir well to combine.
Cooking Steps
Stuffing the okra:
Carefully open each slit okra and generously fill it with the prepared spice mix.
Gently press the sides together to close the slit. Repeat this process for all the okra pieces.
Cooking the Bharwa Bhindi:
In a large skillet or pan, heat the oil over medium heat.
Add the cumin seeds and let them sizzle for a few seconds.
Carefully place the stuffed okra in the pan, ensuring they are not overcrowded.
Pan-frying the okra:
Cook the okra on medium heat for 4-5 minutes without stirring, allowing the okra to brown on one side.
Gently flip each piece and cook for another 4-5 minutes.
Repeat this process until the okra is cooked evenly and becomes tender.
