Aloo Bhaja, a classic Bengali dish, is also known as potato fries or potato fry. It is a delightful Indian twist to the classic French fries, offering a delectable combination of spicy, tangy, and crispy goodness that leaves your taste buds craving for more. This dish is a staple in many Indian households, particularly in Bengal, and has evolved over time, with different regions putting their unique spin on it.
Traditionally, Aloo Bhaja or Potato Fries are made in mustard oil. But, if you are allergic to mustard oil then use any vegetable oil. I make the recipe with both ways.
You can also coat potato slices in rice flour before placing in oil to get crispier fries. This way potato also not absorbed too much oil.
