Indian Style Hakka Noodles are a popular Indo-Chinese dish that originated in India. It is made with boiled noodles, tossed in a spicy and savory sauce, along with a mix of veggies and sometimes, meat. The dish has been adapted to cater to the Indian palate, with a unique combination of spices and flavors.
Assemble all ingredients together to avoid last minute rush.
Wash and finely chop all vegetables.
Cooking
Pour water in a large Pot and add oil and salt into it.
Bring it to boil and add noodles.
Boil for 3 minutes or until the noodles turn al dente. For specific instructions, refer package instructions to know the cooking time.
Drain off the noodles and rinse with cold water to stop the cooking process. Keep aside.
Heat oil in a Wok and add chopped garlic, green chilli, ginger and spring onion. Stir fry on high flame.
Now, add all remaining chopped vegetables ( keep some chopped spring onion for later use) and stir fry until the vegetables cooked slightly. Do not overcook them, we need their crunchiness in the noodles.
Then, add chilli sauce, soy sauce, tomato sauce, salt and black pepper powder. Mix well and combine together everything.
Now, add boiled noodles and vinegar and stir fry.
Then, add bean sprouts and remaining chopped spring onions. Mix well.
Voila! Your Vegetable Hakka Noodles are ready to serve.
If you prefer a spicier dish, you can add more red chilli sauce or add diced chillies to the stir-fry.
You can also add meat such as chicken or shrimp to make it a non-vegetarian dish.
You can also use other types of noodles such as lo mein or udon noodles.
Salt & Black pepper powder: You can adjust salt and black pepper powder as per your taste buds.
Oil: You can choose any neutral tasting oil. I have used Olive Oil.
Choice of vegetables: You can choose mix of vegetables of your choice.
Ginger & Garlic: If fresh ginger and garlic are not readily available, then can also use readymade ginger garlic paste.
