Aloo Matar is a simple and comforting dish made with potatoes and green peas simmered in a spicy tomato-based sauce. It is usually served with roti, rice, or naan and is a staple in many North Indian households.This is a post about how to make Dry Potato Peas Curry or Stir Fry Potato Peas at home with step by step method and photos. This recipe is no onion no garlic recipe. It is easy, simple, vegan and quick to make.You can use fresh or frozen green peas here, both goes well. If using frozen peas like me, Microwave them for 2 minutes and add at the last. I have explained that in the steps.
Assemble all ingredients together to avoid last minute rush.
Peel and wash potatoes. Chop them into small cubes.
If using fresh peas, peel and wash them as well .
Wash and finely chop green chillies, ginger and fresh coriander leaves.
Cooking
Heat oil in a Kadai or Frying Pan over medium flame and add cumin and asafoetida. Let cumin crackles.
Then, add cubed potatoes, chopped ginger and salt. Do not add other spices at this point. Sprinkle little water from top and cover the Kadai with lid. Let the potatoes cook 80% over low flame.
Now, add turmeric powder, coriander powder, chopped green chillies and red chilli powder and mix well. If using fresh peas, add them at this step. Mix very well and cover with lid. (If required, add splash of water)
Now, potatoes are cooked well and coated well with spices. If using frozen peas, Microwave them for 2 minutes on high, drain water and add at this step. Mix well.
Add dry mango powder and cook for another 2 minutes and switch off the flame.
Optionally, garnish with chopped fresh coriander leaves.
Salt & Spices: Feel free to adjust spices and salt as per your taste preferences.
Oil: Choose any neutral tasting oil for the recipe.
Green Peas: Fresh or frozen, both goes well here.
Dry Mango Powder: This is an optional step. For tanginess you could add chopped tomatoes or tomato puree as well. However, I prefer not to add tomatoes while making any dry curry and use lemon juice in place of dry mango powder.
