Soak the Sabudana in water for at least 4 hours or overnight until it becomes soft and swollen.
In a mixing bowl, mix together the Rice Flour, Salt, Sugar, Baking Soda, and Eno.
Drain the water from the soaked Sabudana and add it to the Rice Flour mixture.
Mix everything together to form a batter. Add water if required to achieve a thick and fluffy batter.
Let the batter sit for 15-20 minutes.
Cooking Steps
Grease the idli plates with oil and pour the batter into each mold, filling it 3/4 of the way.
Place the idli plates in a steamer and steam for 10-12 minutes or until the idlis are fully cooked. To check if they are fully cooked, insert a toothpick or knife into the center of an idli. If it comes out clean, the idlis are ready.
Make sure to soak the Sabudana for long enough so that it becomes soft and swollen. If not, the idlis won't turn out well.
