Mohura Pitha is a traditional dessert from Assam, made using rice flour, jaggery, and coconut. The dish is prepared by first making a batter using the rice flour, jaggery, and grated coconut. The batter is then steamed in small cups or molds until it becomes soft and fluffy. The dish is then served with a drizzle of ghee and is enjoyed as a dessert or a snack.
Soaking the Rice: Start by washing and soaking the rice in water for at least 3 hours or overnight. Drain the water and grind the soaked rice to a fine paste in a mixer grinder. Keep the rice paste aside.
Preparing the Coconut Stuffing: Heat a pan over medium heat and dry roast the grated coconut until it turns golden brown in color. Add the jaggery and cardamom powder to the roasted coconut and stir well until the jaggery melts and combines with the coconut. Keep this coconut stuffing aside.
Cooking Steps:
Preparing the Pitha Batter: In a mixing bowl, add the rice paste, salt, and water as required. Mix well to make a smooth and thick batter. Keep the batter aside for 10-15 minutes.
Preparing the Pitha: Heat a non-stick tawa or griddle over medium heat. Pour a ladle full of batter on the tawa and spread it evenly in a circular motion using the back of the ladle. Add a spoonful of the coconut stuffing in the center of the batter.
Folding the Pitha: Using a spatula, fold the edges of the batter towards the center, covering the coconut stuffing, and form a semi-circular shape. Press the edges gently with a spatula to seal the pitha.
Cooking the Pitha: Cook the pitha for 2-3 minutes on one side until it turns golden brown. Flip the pitha over and cook the other side for 2-3 minutes until it turns golden brown in color.
Serving the Pitha: Serve the Mohura Pitha hot with a dollop of ghee on top.
