Low Carb Mix Vegetable is a simple and easy-to-make dish that is perfect for anyone looking for a healthy and nutritious meal. The dish is made with a variety of colorful vegetables, such as cauliflower, broccoli, bell peppers, carrots, and green beans, which are sautéed with garlic and onion in a pan. The vegetables are seasoned with a blend of spices and herbs, such as cumin, coriander, and turmeric, which add depth and complexity to the dish.
Assemble all ingredients together to avoid last minute rush.
Chop all vegetables and keep aside.
Cooking
Heat 2 tbsp olive oil in a Pan over medium to low flame.
Then, add 1 chopped onion and saute till translucent.
add 1 tbsp ginger garlic paste, 1 tsp cumin seeds, salt to taste, ½ tsp coriander powder, ¼ tsp turmeric powder, ¼ cup tomato puree and saute for 2-3 mins to get all spices cooked.
Then, add 1 chopped green chili, ¼ cup defrosted cauliflower florets, ¼ cup defrosted sliced carrot, ¼ cup chopped defrosted fresh beans, ¼ cup defrosted green peas.
Cover and cook for 5-7 minutes.
Now, add ¼ cup chopped defrosted mushroom, ¼ cup chopped defrosted red bell pepper, 2 tbsp chopped coriander stems, ½ tsp sabzi masala, pinch of dry mango powder, 1 tbsp crushed kasoori methi.
Stir everything well for 2-3 minutes so that veggies soak the spices.
