Ingredients
  

  • 2 tbsp olive oil
  • 1 Onions chopped
  • 1 tbsp ginger garlic paste
  • 1 tsp Cumin (Jeera)
  • Salt
  • ½ tsp coriander powder
  • ¼ tsp turmeric powder
  • ¼ cup tomato puree
  • 1 green chillies
  • ¼ cup cauliflower / gobi
  • ¼ cup Carrot
  • ¼ cup beans
  • ¼ cup Green peas
  • ¼ cup mushroom
  • ¼ cup red bell pepper
  • 2 tbsp coriander stems chopped
  • ½ tsp Garam Masala
  • pinch aamchur / dry mango powder
  • 1 tbsp kasuri methi / dry fenugreek leaves
  • coriander leaves / cilantro

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Chop all vegetables and keep aside.

Cooking

  • Heat 2 tbsp olive oil in a Pan over medium to low flame.
  • Then, add 1 chopped onion and saute till translucent.
  • add 1 tbsp ginger garlic paste, 1 tsp cumin seeds, salt to taste, ½ tsp coriander powder, ¼ tsp turmeric powder, ¼ cup tomato puree and saute for 2-3 mins to get all spices cooked.

  • Then, add 1 chopped green chili, ¼ cup defrosted cauliflower florets, ¼ cup defrosted sliced carrot, ¼ cup chopped defrosted fresh beans, ¼ cup defrosted green peas.

  • Cover and cook for 5-7 minutes.
  • Now, add ¼ cup chopped defrosted mushroom, ¼ cup chopped defrosted red bell pepper, 2 tbsp chopped coriander stems, ½ tsp sabzi masala, pinch of dry mango powder, 1 tbsp crushed kasoori methi.
