Matar Ki Subzi is a classic North Indian dish made with green peas simmered in a tomato-based sauce. The sauce is made with a blend of spices, including cumin, coriander, and turmeric, that are first sautéed in oil to release their aromatic flavors. The tomato-spice mixture is then simmered with the green peas until tender and fully flavored. The dish is usually finished with a sprinkle of garam masala, which adds depth and warmth to the dish. Matar Ki Subzi is a staple in North Indian households and is typically served with roti or rice.

Cooking
For making Green Peas Curry Recipe, take a Wok / Kadai and heat oil from low to medium flame.
Then, add ginger garlic paste and chopped onion in the Wok / Kadai and saute them from low to medium flame.
When they start releasing oil, add chopped tomato and green chillies and saute them also.
After a minute, add all masalas in the Kadai and cook all ingredients & masalas together from low to medium flame.
When the mixture starts releasing oil, add green peas into it.
Then, add yogurt slurry into it. Pour the slurry slowly and stir the mixture at the same time. Then, add 1 cup water more and adjust the consistency of gravy. If you like thin consistency, can add more water.
Simmer the curry for 2-3 minutes so that all ingredients blend together well.
Peas: You can take fresh peas or frozen peas as per availability and choice. However, I have taken frozen peas in this Peas Curry Recipe to show quicker option. If you are taking fresh peas, then steam them for 3-4 minutes before adding them into mixture.
Oil: You can use any neutral tasting oil. However, I recommend Olive Oil.
Salt & spices: I have kept quantity of salt & all spices minimal, however if you like spicier food, can add more salt or spices as per your preference and taste.
Consistency of Gravy: You can keep the consistency as per your preference.
Accompanies: Serve with Indian breads like Roti, Paratha or Naan. This Peas Curry also tastes good with plain steamed Basmati or Jeera Rice.
