Instant Pot Spaghetti Aglio Olio is a classic Italian dish made from spaghetti, garlic, olive oil, red chili flakes, and a sprinkle of Parmesan cheese. The ingredients are simple, but the flavor is anything but! This dish is a celebration of the true Italian cuisine, where simple ingredients come together to create a bold and hearty meal.
Assemble all ingredients together to avoid last minute rush.
Peel and finely chop garlic. Wash and finely chop parsley.
Roughly chop dried tomatoes.
Grate parmesan cheese with a Grater.
Cooking
Set saute mode for 5 minutes in your Instant Pot. Then, add olive oil, chili flakes, and chopped garlic. Saute until the raw aroma of garlic goes away. Do not brown them.
Add water, salt and spaghetti. Simmer till the saute time over automatically. Pasta strands soften a bit before closing Instant Pot lid and you don't have to break them into half.
Close lid of Instant Pot and set the pressure cook mode for 5 minutes. Set the steam valve to the sealing position.
Manually release the steam after 5 minutes. Open the lid and add chopped parsley and dried tomato, and toss pasta gently. The pasta liquid and oil will emulsify, thickening and coating the spaghetti.
Sprinkle grated parmesan and optionally can also sprinkle some more parsley before serving.

Adding Water: If you want soupy pasta, could add more water as well according to your preference. In case, accidentally you add too much water, then set the saute mode for 10 minutes to reduce the water.
Garlic: Feel free to add garlic as per your taste preference but it should be really fine chopped.
Spices & Salt: Adjust the quantity of salt and red chili flakes as per your preference.
Herbs: Add sun-dried tomato and parsley once the pasta is cooked. You could also choose herb of your preference.
Olive Oil: I have used extra virgin oil to make this recipe. Feel free to choose olive oil of your preference and taste.
For Vegans: If you skip the parmesan cheese, this is a 100% vegan pasta recipe.
