Sooji Halwa, also known as Sheera in some regions, is a popular Indian sweet dish made from semolina, ghee, sugar, and spices. The semolina is cooked in a mixture of ghee, sugar, and water until it becomes a smooth, pudding-like consistency. It is then flavored with cardamom, nutmeg, or saffron, and garnished with dry fruits such as almonds, cashews, and raisins. Sooji Halwa is a versatile dessert that can be served hot or cold, and it can also be shaped into sweet balls or bars.
Assemble all ingredients together to avoid last minute rush.
Roughly chop all dry fruits for garnishing.
Cooking
Heat ghee in a Kadai or Frying Pan over medium flame.
Add semolina and saute it over low heat till it turns deep brown in color, stirring continuously in between. Stirring is essential while roasting semolina so that it gets evenly roasted.
Roasting semolina over low heat requires patience but do not hurry up this process over high flame, as semolina can burn.
Now, once semolina is roasted add sugar and mix gently.
Then, immediately add water from a little distance in the Kadai or Frying Pan as there is a lot of bubbling and splashing.
Stir continuously and semolina will calm down after 1 or 2 minutes. Stir continuously to avoid lump formation. Sugar will dissolve simultaneously in the Halwa.
Now, add cardamom powder. Stir once again to combine.
Switch off the flame after a minute or so when you get your desired consistency of Halwa.
Garnish it with chopped dry fruits of your choice.
Ratio: The perfect ratio of suji: ghee: sugar is 1: 1: 1. Though, you can adjust sugar as per your taste.
To avoid spluttering: After adding water, cover the pan with a lid to avoid spluttering it on your stove.
Storage: You can store leftover Suji Halwa in an Airtight Container in the refrigerator for 3-4 days. Reheat it in the microwave for 3 – 5 minutes before serving.
