Litti Chokha is a combination of two elements - the litti and the chokha. The litti is a dough ball made of whole wheat flour and stuffed with a mixture of spices, ghee, and roasted gram flour. The dough balls are then roasted over hot coals, or baked in an oven, until they are crispy and golden brown on the outside and soft and tender on the inside. The chokha, on the other hand, is a spicy and tangy mixture of mashed vegetables, such as eggplant and tomato, seasoned with spices and herbs. The litti and the chokha are usually served together, with the litti being dipped in ghee, and the chokha being spread over the top, for a truly scrumptious experience.
Assemble all ingredients together to avoid last minute rush.
Finely chop all onion, green chillies and fresh coriander leaves for the recipe and keep separately.
Cooking
For Litti
Add all the ingredients for litti dough in a big Mixing Bowl and mix well.
Now, start kneading by adding little by little water. Do not add water at once, pour little by little so that you have idea how the dough is forming.
Form a soft and firm dough for Litti. Keep it for rest at least 20 minutes.
Now, let’s prepare its stuffing by adding all the ingredients of stuffing in a Bowl. Do not forget to finely chop green chili and coriander leaves.
Let’s prepare Litti, pinch a small ball sized dough and press the edges and form a cup.
Now, place a ball sized or 2 tbsp stuffing in the center.
Start pleating the dough, make sure the stuffing is secured well in the dough. Pinch off the excess dough and form a secured litti ball. Make all littis the same way.
Take an Appam Pan and grease it lightly with oil. Place all the littis in an Appam Pan. Or preheat and bake in Oven or Air Fryer at 180°C for 45 minutes (Oven) or for 30 minutes (Air Fryer) flipping in between the timer to check evenly baking.
Cover the Appam Pan and cook on low flame for 10 minutes. Flip over and cook both sides for approx. 30 minutes or until cooked well, littis turn golden brown from all sides.
For Baingan Chokha
Wash and pat dry eggplant and lightly grease it with mustard oil.
Now, slightly slit from a side in between and secure garlic cloves inside it.
Then, roast the eggplant and tomatos over direct flame or in Oven until they are roasted well. The garlic cloves will also get roasted with the eggplant.
Let it cool down so that you can handle it easily.
Now, take a Big Bowl or deep Plate and add roasted eggplant(also roasted garlic) and tomatos in it. Mash all ingredients properly with your hands or with a big Spatula, so that they mix well.
Now, add boiled mashed potato and chopped onion, green chilli, salt, red chilli powder and mustard oil. Mix well.
Sprinkle chopped coriander leaves from top. Baingan Chokha is ready to serve!
For Tomato Chokha
Wash and pat dry all tomatoes, make a small slit in between to keep garlic cloves and roast same like eggplant.
Grate ginger in a Mixing Bowl and add chopped onion, green chilli, mustard oil and salt.
After tomatoes cooled down a bit, mash it in a big Bowl and transfer them into the onion Bowl.
Mix everything well and garnish with chopped coriander leaves.
Choosing Oil: Traditionally, chokha is made with mustard oil but if you do not like it can swap with any neutral tasting oil or clarified butter.
Salt & Spices: Feel free to adjust salt and spices as per your taste preference.
If sattu is not available? If sattu is not available, then use roasted chana dal. Grind ¾ cup chana dal in a Grinder and make fine powder. Sieve it before use.
