Blending: Once all the roasted ingredients have cooled down, put them in a grinder. Add red chili powder, salt, and tamarind paste. Blend everything into a coarse powder. You don't want it to be too smooth; a slightly grainy texture is desired.
Storage: Transfer the chutney into an airtight container. It can be stored at room temperature for a week and in the refrigerator for up to a month.
Texture: The chutney should be grainy and not very powdery. The texture adds to the overall mouthfeel.
Heat Level: Adjust the red chili powder according to your heat preference. The chutney is typically spicy, but you can reduce the chili for a milder version.
Uses: Apart from Vada Pav, this chutney can be used in sandwiches, rolls, or as a side with snacks.
Oil Choice: Any neutral oil works for this recipe. It is used mainly for roasting.
