Instructions
Pre-Cooking prep steps
Rinse the rice in water and soak it in water for 30 minutes.
Chop the vegetables into small pieces.
Beat the eggs in a bowl and set aside.
Cooking steps
Heat oil in a pan and add cumin seeds and mustard seeds. Once the seeds start to splutter, add the ginger-garlic paste and sauté for a minute.
Add the chopped vegetables and stir-fry for 2-3 minutes.
Add the beaten eggs and scramble them with the vegetables.
Drain the soaked rice and add it to the pan. Add turmeric powder, red chili powder, garam masala powder, coriander powder, and salt to taste.
Stir-fry the rice for 2-3 minutes, until it is well coated with the spices.
Add 2 cups of water and bring it to a boil. Reduce the heat to low and cover the pan with a lid. Cook for 18-20 minutes, or until the rice is cooked and fluffy.
Garnish with chopped cilantro and serve hot.
