Ingredients
  

  • 2 cups basmati rice
  • 4 egg
  • 2 tablespoons Oil
  • 1 teaspoon Cumin (Jeera)
  • 1 teaspoon mustard seeds / rai
  • 1 teaspoon turmeric powder
  • 1 teaspoon Red Chilli Powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon coriander powder
  • 1 tablespoon ginger garlic paste
  • 1 cup mixed vegetables carrots, peas, bell peppers, onions
  • Salt
  • 2 tablespoons coriander leaves / cilantro

Instructions
 

Pre-Cooking prep steps

  • Rinse the rice in water and soak it in water for 30 minutes.
  • Chop the vegetables into small pieces.
  • Beat the eggs in a bowl and set aside.

Cooking steps

  • Heat oil in a pan and add cumin seeds and mustard seeds. Once the seeds start to splutter, add the ginger-garlic paste and sauté for a minute.
  • Add the chopped vegetables and stir-fry for 2-3 minutes.
  • Add the beaten eggs and scramble them with the vegetables.
  • Drain the soaked rice and add it to the pan. Add turmeric powder, red chili powder, garam masala powder, coriander powder, and salt to taste.
  • Stir-fry the rice for 2-3 minutes, until it is well coated with the spices.
  • Add 2 cups of water and bring it to a boil. Reduce the heat to low and cover the pan with a lid. Cook for 18-20 minutes, or until the rice is cooked and fluffy.
  • Garnish with chopped cilantro and serve hot.
