Using simple pantry ingredients like butter, flour, eggs, sugar, and baking powder creates a moist, delicate and fluffy muffins. These blueberry muffins with golden brown domed tops are an irresistible breakfast treat and a perfect evening snack. Each perfectly baked muffin is sprinkled with a little sugar with jammy berries inside.
Freeze and eat later!
The best part of this blueberry muffin recipe is that you can freeze them and reheat later before serving. Once cooled at room temperature, I recommend to wrap them in plastic wrap individually, and then place in an Airtight Container. When want to eat, unwrap, place on a paper towel and Microwave for 50 to 70 seconds.
How to ensure Muffins are done completely?
The muffins are done when a toothpick inserted in the center comes out clean, any wet batter is a sign of raw and uncooked center. Or you could use an instant-read thermometer for a more precise measurement, and probe the center. When it reaches around 210ºF (99ºC), it’s ready to eat.

Ingredients
  

  • 2 ½ cup all purpose flour / maida
  • 2 egg
  • 1 ½ cups blueberries
  • 2 ounces butter, unsalted
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 2 ½ tsp baking powder
  • 1 ½ cups sugar
  • ¼ cup oil
  • 1 cup buttermilk

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Take out the butter from fridge, so it comes at room temperature.

Cooking

  • Preheat the Oven to 425ºF (218ºC) and place the oven rack in the upper middle position.
  • In a large Mixing Bowl whisk together the flour, baking powder and salt.
  • In another Bowl whisk together, sugar and eggs for a minute or until smooth.
  • Slowly add in the melted butter and vegetable oil into the egg mixture and whisk until incorporated.
  • Now, Whisk the buttermilk and vanilla extract into the egg mixture.
  • Then, add the egg mixture and 1 ¼ cups of blueberries to the flour mixture. Gently fold the flour mixture with the blueberries until moistened but do not overmix.
  • Grease the Muffin Tray with nonstick cooking spray or line with paper cups. Fill each cup to the top and mounded slightly, about a ⅓ cup per muffin.
  • Sprinkle some sugar over the top of each muffin.
  • Evenly distribute the remaining ¼ cup of blueberries on top of each muffin, lightly pressing in 2 to 3 berries per muffin.
  • Bake for 10 minutes and rotate the Tray. Bake until muffins are golden brown for about 6 to 7 minutes.
  • Cool muffins in the Tray for 5 minutes. Use a Fork to carefully remove them from the Tray and transfer to a cooling rack. Let them cool completely.
  • Your yummy Blueberry Muffins are ready to serve!
