Ingredients
  

  • 2 apple
  • 1 tbsp ghee/clarified butter
  • ¼ cup sugar
  • 2 cups milk
  • ¼ tsp cardamom powder
  • ¼ cup condensed milk
  • 5-6 almond / badam chopped

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Peel the apples first and then grate with the help of a Grater. Avoid using Chopper here as apples might leave juice while chopping in chopper. We need solid grated pieces for the recipe.

Cooking

  • Heat ghee/ clarified butter in a pan or kadai over medium flame and add grated apples. Do not leave grated apples for too long as they would oxidized and turn brown.
  • Cook apples until all liquid get evaporated. Mash the apples occasionally.

  • Cool the cooked apples completely. And keep aside.
  • Now, heat milk in another pan or kadai over medium flame. Bring it to boil.
  • Then, add condensed milk and mix well with the boiling milk. If using sweetened condensed milk, no need to add sugar here.

  • If using unsweetened condensed milk, add sugar at this step and mix well with the milk.
  • Let the milk boil for 10 minutes or until the milk thickens to a desired consistency.
  • Add ¼ tsp cardamom powder (optional) and mix well. Let the milk cool completely.
  • Then, add milk to the cooked apple and mix well. Make sure both the apple and the milk are at room temperature, otherwise milk would curdled up.

  • Refrigerate for 30-40 minutes until Kheer gets chilled.
  • Garnish with chopped nuts/dry fruits and serve!

Notes & Tips

  • Apples for recipe: Try not to choose sour apples for the recipe. I have used pink lady apples here.
  • Adding Sugar: Adjust sugar as per your taste preference. In place of white sugar, can add brown sugar or sugar free. If you are using sweetened condensed milk or milkmaid, then skip adding sugar.
  • Milk: I always use full fat milk for my kheer recipes as it gives creaminess and desired thickness to kheer. However, please feel free to choose your choice of milk.
  • Dry fruits:  Add nuts of your choice like almonds, cashews, pistachios, raisins.
  • Quantity: Please scale the recipe as per your requirement. 
  • Serving: Apple Kheer is best served chilled.
