In this article, I’ll share with you my tried and tested recipe for Kaju Katli, as well as some fascinating variations and important information about its nutrition.

This mixture is then shaped into thin, diamond-shaped slices and garnished with edible silver leaf (optional). The result is a sweet treat that is both rich and delicate, with a melt-in-your-mouth texture and a nutty, sweet flavour.

Ingredients
  

  • ¼ tsp cardamom powder
  • 2 cup cashew kaju
  • 1 cup sugar
  • ½ cup water
  • 1 tsp ghee / clarified butter ghee

Instructions
 

  • To start this Kaju Katli Recipe, in a Mixi Jar or Blender take cashews and blend them to a fine powder. Make sure the cashews do not release its oil so try to blend in small batch.
  • Then, sieve the cashew powder making sure there are no lumps. Keep aside.
  • Now, in a Wok / Kadai take 1 cup sugar and ½ cup water. Stir well and dissolve sugar. boil for 5 minutes or until 1 string consistency is attained.
  • Transfer powdered cashew in the syrup and mix well. Stir until the mixture is well combined and smooth paste is formed. Now add 1 tsp ghee and ¼ tsp cardamom powder and mix well.
  • Cook till the mixture turns smooth paste and starts to separate pan slightly. do not overcook, as the paste will turn hard.
  • Grease the butter paper with ghee and transfer the mixture on to the Butter Paper.
  • Place the cashew dough between butter paper and roll using a rolling pin. Roll slightly thick making sure it's uniform. Now grease with ghee and apply silver leaf or silver vark.
  • Now cut into diamond shape or shape of your choice.
  • Your Kaju Katli is ready. You can store it in a Air Tight Container

Notes & Tips

  • Cashews: Powder the cashews as fine as you can. If possible, powder them in batches. This will ensure a smooth and fine texture. Do not overdo the cashews. If blended for long, cashews will release their hidden oils, and it will result in a crumbly and sticky mix.
  • Sieve: Sift the powdered cashews through a sieve is an essential step. Please, do not skip through it.
  • Sugar Syrup: Prepare the sugar syrup to the correct consistency.
  • Adding Cashew in Sugar Syrup: Add the powdered cashews to the sugar syrup in batches, or else lumps will form in the syrup.
  • If cashew dough becomes dry? Add a tsp of milk and mix to combine. The mixture will feel sticky. Transfer it to the fridge to chill for 20 minutes. Knead it and dough will be good.
