Ingredients
  

  • 500 Milk Powder
  • 2 cups cashew
  • 1 Green cardamom
  • 1 cup milk
  • 1 teaspoon ghee / clarified butter

Instructions
 

Preparations

  • Assemble all ingredients to avoid last minute rush.
  • Grind finely cashews. Try to grind them in batches otherwise cashews will release their oil due to heat of blender or mixi and becomes sticky.
  • Also, grind green cardamom into a powder form.

Cooking

  • Take a Kadai and heat ghee into it on low flame.
  • Now, add milk and milk powder into it and stir completely to avoid any lumps. Add milk powder into batches so that no lumps will be formed.
  • Now, add sugar into it and mix well.
  • Cook the mixture until it starts combining together. Do not overcook the mixture otherwise it will turn sticky and becomes rubber like texture.
  • Now, take a Mixing Bowl and add the prepared milk powder mixture, cardamom powder and grinded cashews into it. Mix well.
  • Now, take butter paper or parchment paper and place prepared mixture over it. Now cover it again with the paper and with the help of a Rolling Pin, roll the mixture so that there will be no cracks in your Kaju Katli.
  • Let it set for 2 hours.
  • Now remove the mixture from the mould and cut it into your desired shape.
  • Voila! Your Kaju Katli is ready to serve.
