Ingredients
  

For The Soup

  • 1 tbsp oil
  • 1- inch ginger
  • 4 cloves garlic
  • 2 spring onion
  • 1 Carrot
  • 4 button mushrooms
  • 1 green chillies
  • 1 lemongrass stalk
  • ¼ tsp black pepper powder
  • 1 tsp salt
  • 4 cups water
  • 2 tbsp lemon juice
  • coriander leaves / cilantro

For Garnish – choose any or all

  • coriander leaves / cilantro
  • 4 lemon
  • 1 tbsp spring onion

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Rinse and finely chop all vegetables in a Bowl.
  • Get ready ingredients for garnishing.

Cooking

  • Heat oil in a Cookpot over medium flame. Add chopped ginger, garlic and saute for few seconds or until raw aroma goes away.
  • Then, add all chopped veggies in the Cookpot. You can add veggies of your choice as well. Mix very well.
  • Stir fry for about 2-3 minutes over medium flame.
  • Add 4 cups of water or homemade vegetable stock instead of water.
  • Then, add chopped lemongrass stalk. Also, add black pepper powder and salt into it.
  • When the veggies are properly cooked, add chopped coriander leaves and lemon juice. Add lemon juice as per your taste. Mix well and switch off the flame.
  • Lastly, add chopped spring onion greens and coriander leaves.
  • Garnish with lemon slices while serving piping hot Lemon Coriander Soup.
