Ingredients
  

  • 5 ripe mangoes
  • 1 tsp Cumin (Jeera)
  • 8 cardamom / Elaichi seeds removed, husks discarded
  • 1 tsp Red Chilli Powder
  • ¼ tsp chilli flakes
  • 5 garlic
  • 1 inch ginger
  • 200 ml cider vinegar
  • 1 cup sugar
  • 2 tsp salt
  • 1 dried red chilli

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Finely chop dry red chilli, ginger and garlic cloves.
  • Wash and peel mangoes. Cut mangoes into pieces, as you like.

Cooking

  • Dry roast cumin seeds and cardamom seeds for a few seconds in a Pan until they turn golden and release aroma, Roast evenly.
  • Transfer them into a Pestle - Mortar and add also dry red chilli, red chilli flakes and chopped ginger and garlic.
  • Evenly crush everything together.
  • Now, add sugar, red chilli powder, salt and cider vinegar into a Pan and gently heat until sugar dissolves completely.
  • Add crushed ingredients and chopped mangoes in it.
  • Bring it to the boil and then simmer it to low flame.
  • Cook gently for about 40 minutes or until mixture looks syrupy, stirring regularly.
  • When you get the desired consistency, switch off the flame and pour in sterilized jars and seal with lids immediately.
  • Your tasty Indian style Mango Chutney is ready!

Notes & Tips

  • Storage: You can store this Mango Chutney for up to 6 months in a refrigerator. But, once you open the lid again, try to consume within a month and store in a refrigerator.
  • Sterilizing? It is highly recommended to use only sterilized jars or containers to store this Mango Chutney to stay fresh for longer period.
  • Spices: You can always adjust spices and salt as per your taste preference.
  • Sugar: You can also use brown sugar for this recipe and can also adjust the quantity as per your sweet taste buds.
