The texture is perfect for a soup and it’s always the perfect consistency, not too thick and not too thin. Whenever I cook Tomato Shorba, it brings back fond memories of my mother’s cooking and the love she put into every meal.

Ingredients
  

  • 4 to Tomato
  • 1 ½ cups vegetable stock
  • 1 inch ginger
  • 3 cloves garlic
  • 1 tbsp oil
  • 1 bay leaf / tej patta
  • 1 inch cinnamon
  • ½ tsp Red Chilli Powder
  • 1 tbsp salt
  • 1 tsp Cumin (Jeera)
  • ½ tsp black pepper powder
  • ¼ tsp turmeric powder
  • ½ tsp coriander powder
  • coriander leaves / cilantro

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Wash tomatoes properly and make a smooth puree in a Stand Blender.
  • Mince properly ginger and garlic. Alternatively, you can take ½ tbsp ginger garlic paste.
  • Wash and finely chop coriander leaves with the stems. Coriander stems helps to enhance flavors.

Cooking

  • Heat oil in a Cookpot or Pan over medium flame and add bay leaf, cumin seeds and cinnamon. Sauté all ingredients till fragrant.
  • Add in the minced ginger and garlic and again saute for few seconds, so the raw aroma goes away.
  • Now, add pureed tomatoes and let them simmer for 4-5 minutes on low flame.
  • Add turmeric powder, coriander powder and red chilli powder into it. Mix very well and cook for 2 more minutes.
  • Then, pour vegetable stock and mix well. Let it simmer for 3-4 minutes.
  • Add salt and black pepper powder, mix well. Garnish with chopped coriander.
  • Serve hot Tomato Shorba as a side dish / appetizer or main course.

Notes & Tips

  • Ginger & Garlic: If you don’t find fresh ginger and garlic, then opt for ginger garlic paste.
  • Vegetable stock: alternatively, you can choose to add hot water of same quantity in the Tomato Shorba Recipe.
  • Salt & Spices: Feel free to adjust salt and spices as per your taste preferences.
  • Oil: Choose any neutral tasting oil for the recipe. You can also add some butter on top while serving.
