Ingredients
  

  • 1 cup basmati rice
  • ½ cup coconut grated
  • 2 cups water
  • ½ tsp instant yeast
  • ½ teaspoon salt
  • ¾ teaspoon sugar
  • ¼ tsp oil

Instructions
 

Preparation

  • Assemble all ingredients to avoid last minute rush.
  • Rinse rice thoroughly with running water until water comes clean.
  • Soak rice at least for 4-5 hours.
  • Drain all the water and then grind the soaked rice in a Mixi or Blender. Also add the grated coconut, salt and sugar.
  • Add water and grind all the ingredients to a smooth flowing batter.
  • Transfer the batter in a Mixing Bowl.
  • Now, add instant yeast (or rapid rising yeast) in the batter. Mix thoroughly and evenly. Cover the bowl and set aside to ferment for 1 to 2 hours until the batter doubles in volume and has plenty of air-pockets.

Cooking

  • Heat a Frying Pan or an Appam Pan and spread some oil.
  • Spread a ladle full of the batter on the Pan and spread evenly over the Pan. You can tilt Pan a little to spread it evenly. Keep heat medium to low.
  • Brush some oil on the sides if you prefer.
  • Cover the pan with a lid and let the appam cook evenly. The base would become light golden with crispy edges.
  • Gently remove the cooked appam with a spatula. Make the remaining appam the same way. Your Appam is ready to serve! You can serve it with coconut chutney or sambhar.

  • Storage: You can store appam in airtight containers for several months. However, storing it in direct sunlight will make it go stale quickly. So be sure to keep appam away from heat sources.
