Ingredients
  

  • 1 tsp olive oil
  • 2 garlic
  • 1 inch ginger
  • 1 spring onion
  • 1 Carrot
  • ¼ broccoli
  • 5 mushroom
  • ¼ cabbage
  • 5 cups water
  • ¼ lettuce
  • 1 tbsp lemon juice
  • Salt
  • 1 tsp black pepper powder
  • butter, salted

Instructions
 

Preparations

  • Assemble all ingredients together to avoid last minute rush.
  • Wash all vegetables in running water.
  • Finely chop all vegetables.
  • If you don’t have lettuce, you can totally skip it.
  • You can use red or white onions, if you don’t have spring onions.

Cooking

  • To start making Vegetable Clear Soup Recipe, take a Cooking Pot and heat oil. Now, saute garlic and ginger on high flame for a minute.
  • Then, add spring onions and continue to saute.
  • Now, add mushrooms and continue to saute till they sweat for 2 minutes.
  • add all the vegetables and after a minute, add salt and saute on high flame for 2 minutes.
  • Now add water.
  • Boil the soup for 10 minutes or till vegetables are partially cooked.
  • At the end, add lettuce. do not cook lettuce too much as they will lose crunchiness.
  • Add pepper and mix well. Simmer for 5 minutes adjusting the desired consistency.
  • Off the flame and add lemon juice.
  • Serve in a Soup Bowl and add a small cube of butter on top of it for creaminess.
