Ingredients
  

  • 320 grams Basmati rice
  • 400 grams Carrot grated
  • 60 grams Onions finely chopped
  • 2 green chillies slit
  • 2 tbsp ghee / clarified butter
  • 1 tsp mustard seeds / rai
  • 1 tsp Cumin (Jeera)
  • 1 curry leaves
  • 2 tbsp cashew
  • 1/4 tsp Turmeric powder
  • Salt
  • 2 tbsp coriander leaves / cilantro chopped, for garnish

Instructions
 

Preparation

  • Wash the basmati rice a few times under cold water until the water runs clear. Soak it for 30 minutes. Drain the water after soaking.
  • Peel and grate the carrots.
  • Finely chop the onions and slit the green chillies.

Cooking

  • In a pan, heat the sunflower oil or ghee on medium flame.
  • Add the mustard seeds. Once they begin to splutter, introduce the cumin seeds.
  • Add the chopped onions and sauté until they turn translucent.
  • Add the green chillies and curry leaves to the pan, and sauté for a minute.
  • Stir in the grated carrots, and cook them until they are halfway done.
  • Add the drained rice, turmeric powder, and salt to the pan. Mix everything well.
  • Pour in 640 grams of water and mix again.
  • Cover the pan and simmer the mixture on a low flame. Cook until the rice grains are soft and fully cooked.
  • Garnish with coriander leaves and cashews just before serving.
