Ingredients
  

  • 2 tbsp butter, salted
  • 2 garlic finely chopped
  • 1 Onions finely chopped
  • 450 grams spinach / palak frozen or freshly blanched
  • ¼ cup coconut desiccated or freshly grated or coconut milk
  • 4 cashew blanched
  • 1 cup chicken broth
  • 2 cups water
  • 2 tbsp cream

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • I have used frozen spinach for the recipe. If using fresh spinach, blanch it before using.
  • Finely chop onion and garlic for the recipe.

Cooking

  • Heat 2 tbsp butter in a Cookpot over low to medium flame. Add chopped garlic cloves and saute till raw aroma goes away.
  • Then, add 1 finely chopped onion and saute till translucent.

  • Add spinach and cook for 5-7 minutes.

  • Then, add coconut and mix well with the spinach.
  • Cook for another 5 mins and let it cool down a bit.
  • Transfer to a blender jar and add blanched 4 cashews.

  • Blend to a fine paste and transfer back to the Pot.
  • Add 1 cup chicken/vegetable stock and 2 cups of water.
  • Bring it to boil over high flame and then simmer for 10 mins over low flame.

  • Make sure to blanch the spinach before adding to the Pan.
  • Use desiccated or freshly grated coconut, depending on the availability. Or you can pour ¼ cup coconut milk as well.
  • For the stock, use chicken or vegetable or if both are not readily available simply pour water. However, stock give depth and flavor to the soup.
