  • 2 cups basmati rice
  • 1 cup sugar
  • 4 cups water
  • 2 cardamom / Elaichi
  • 2 cloves
  • 2 bay leaf / tej patta
  • 1/2 cup Raisins optional
  • 1/2 cup cashew optional
  • 2 tbsp ghee / clarified butter

Instructions
 

Pre-Cooking Prep (about 20 minutes)

  • Rinse the rice thoroughly and soak it in water for about 20 minutes.
  • Crush the cardamom pods and cloves using a mortar and pestle or a spice grinder.
  • Chop the cashews and raisins, if using.

Cooking Steps (about 30 minutes)

  • Heat the ghee or oil in a large pan over medium heat.
  • Add the crushed cardamom, cloves, and bay leaves to the pan and fry for about 1 minute.
  • Drain the rice and add it to the pan, stirring constantly for about 2 minutes.
