Ingredients
  

  • 1.5 cups cauliflower / gobi small florets (frozen or fresh)
  • 1 tsp Fennel (Saunf)  
  • ½ tsp Cumin (Jeera)
  • 2 cloves
  • 3 tbsp olive oil
  • 1.5 tsp salt
  • 2 garlic chopped
  • 1 inch ginger
  • 1 Onions chopped
  • ½ tomato chopped
  • ¼ tsp turmeric powder
  • ¼ tsp Red Chilli Powder
  • ¼ tsp coriander powder
  • 1 green chillies chopped
  • ¼ tsp aamchur / dry mango powder
  • coriander leaves / cilantro

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Chop cauliflower into small florets for the recipe. You can choose fresh or frozen cauliflower depending on the availability.
  • For preparing the Spice Mix, add 1 tsp fennel seeds, ½ tsp cumin seeds & 2 cloves in a Mortar Pestle. Coarsely crush them into a powder.
  • Finely chop garlic, ginger, onion, tomato and fresh coriander or cilantro.

Cooking

  • Now, heat 1.5 tbsp olive oil in a pan over medium to high flame and add chopped cauliflower florets.

  • Cover and cook the florets for 7-8 mins till al dente. Let the crunch of cauliflower remains.
  • Then, add salt to taste and cook for another 5 mins. Remove from the Pan and keep aside.
  • In the same Pan, heat 1.5 tbsp olive oil again. Add chopped garlic cloves, ginger and sauté till raw aroma goes away.
