Ingredients
  

  • 1/2 cup vermicelli / sevaiya
  • 2 tbsp ghee / clarified butter
  • 1 milk
  • ½ cup condensed milk
  • ¼ tsp cardamom powder
  • 12 almond / badam

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Coarsely crush vermicelli
  • Roughly chop almonds.

Cooking

  • Heat ghee in a Kadai or Cookpot, add vermicelli and saute on high flame, stirring continuously for about 2-3 minutes.
  • Now, add chopped almonds, mix and sauté for 30 seconds.
  • Then, add 3 cups milk and mix well. Reduce heat, cover and cook for 5-7 minutes.
  • Add condensed milk and mix well.
  • Add green cardamom powder, mix again and cook for 1-2 minutes more.
  • Transfer into Serving Bowls, garnish with almonds and serve warm.
  • Enjoy Sevaiya Kheer!

Notes & Tips

  • Sweetness: Feel free to adjust sweetness by adding sugar, if desired. You can use any sugar- white or brown, granulated or fine.
  • Choice of dry fruits: You can add more dry fuits like cashews or raisins, if desired.
  • Condensed milk: It gives thickness and creamy texture to the Kheer and also the required sweetness. If you do not like, could skip adding it and instead add 4 tbsp of sugar here.
  • Cardamom powder: If you don't have cardamom powder, then simply grind cardamom pods in a Grinder and add accordingly.
