The traditional version of Mathri is deep-fried, but with the Airfryer, it can be made with less oil and still retain its crunchiness.

Ingredients
  

  • 1 ½ cup all purpose flour / maida
  • 1 tsp salt
  • 1 tsp carom seeds ajwain
  • 2 tbsp ghee / clarified butter ghee
  • ½ cup water as required
  • ¼ tsp black pepper optional

Preparations

  • Assemble all ingredients to avoid last minute rush.
  • Melt clarified butter.

Cooking

  • To start preparing Mathris Recipe, take a Mixing Bowl and add all purpose flour, salt, carom seeds, black pepper and melted ghee.
  • Now, mix everything well.
  • Now, add very less water and start kneading the dough. Add water as required while kneading. The dough should be hard otherwise Mathris will not be crunchy.
  • Keep the dough for rest about 30 minutes.
  • After 30 minutes, knead the dough slightly and pinch a ball and start making a big circle using Rolling Pin and Rolling Board. It should not be too thin or too thick.
  • Now, take a cookie cutter, small steel bowl or small steel glass or you can take small lid of a bottle (as shown in the photo) and cut dough into round pieces as many as you can. Make round cut pieces with rest of the dough also.
  • Now, prick each Mathri with a help of a fork.
  • Then, brush very less ghee on each Mathri.
  • After that, place each one in Air Fryer basket and air fry them for 10 minutes at 180°C. Now, flip them on the other side and again brush ghee on each Mathri and air fry them for 10 minutes at 180°C.
  • Let them cool down for 5-6 minutes before serving.
  • Your yummy Mathris are ready to serve.
  • You can store them in an Airtight Container for 2 weeks.

Notes & Tips

  • Flour: You can swap all purpose flour to whole wheat flour or take 50% each for this Mathri Recipe.
  • Salt:  Add salt as per your taste.
  • Clarified Butter: You can swap clarified butter to oil such as olive oil, sunflower oil, canola oil.
  • Black Pepper: Adding black pepper is completely optional. If you want, can skip this.
  • Kneading Dough: A tight dough is must for this recipe. A soft dough will not turn out into a Crunchy Mathri.
  • If don't have Airfryer? You can also bake them in an Oven for the same temperature and time.
    Just preheat the oven for 5 minutes before placing the Mathris into it.
  • Want to try Traditional Method? If you want to try Traditional Method for making Mathris, then deep fry them in hot oil. Take a note that oil should be hot enough before dropping Mathris otherwise they will soak excess oil and your Mathris will become soft.
