Ingredients
  

  • 1 cup poha / flattened rice / rice flakes
  • water for soaking
  • Salt
  • 3 tsp oil
  • 1 tsp mustard seeds / rai rai
  • ½ tsp Cumin (Jeera) jeera
  • pinch Asafoetida / hing hing
  • curry leaves kadi patta
  • 1 Onions
  • 1 green chilly
  • ½ tsp turmeric powder haldi
  • 1 inch ginger
  • 1 Potatoes
  • 2 tbsp peanuts
  • 1 tbsp coriander leaves / cilantro
  • 1 tbsp lemon juice

Instructions
 

Preparations

  • Assemble all ingredients together to avoid last minute rush.
  • Wash & finely chop all vegetables.
  • Wash & soak poha in fresh water till it turn soft.
  • Drain off the water with the help of Strainer.

Cooking

  • Now, add salt in Poha, mix gently and keep aside.
  • Now in a Wok / Kadai, heat oil , and add mustard seeds, cumin seeds, hing and curry leaves.
  • Allow them to splutter.
  • Then add onions and saute them till they change colour.
  • Now, saute green chilly and ginger till the raw smell disappears.
  • Add potato, salt and turmeric powder and saute for a minute.
  • Cover for 5 minutes and allow to cook potatoes on low flame.
  • Then, add in soaked poha and roasted peanuts. Mix gently. cover and simmer for 2 minutes.
  • Switch off the flame and add chopped coriander leaves and lemon juice.
  • Serve Poha with green chutney and hot ginger cardamom tea.

Notes & Tips

  • Soaking poha: Do not over soak poha as they turn mushy.
  • Potatoes: Make sure to cook potatoes well. You can also use boiled potato.
  • Onions: Some don’t like to add onions in Poha. You can completely skip this step.
  • Peanuts:  Always use roasted peanuts for Poha Recipe.
  • Dryfruits: You can add roasted cashews and almonds also to give your Poha Recipe richness. I personally like adding roasted cashews.
  • Spiciness: If you prefer spicier food, simply increase the quantity of red chili powder and green chillies a to get the flavor just right for your plate.
