Ingredients
  

For Dal

  • ½ cup green gram lentil / moong dal
  • ¼ cup bengal gram dal / chana dal
  • ¼ cup masoor dal or orange lentils or split yellow lentils
  • 1 Onions
  • 3 cup water
  • 3 tsp ghee / clarified butter
  • 1 tsp cumin / jeera
  • 1 tsp mustard seeds / rai
  • pinch Asafoetida / hing
  • 1 green chillies
  • 1 tsp ginger garlic paste
  • 1 cup water
  • 1 to Tomato
  • ¼ tsp turmeric
  • ¼ tsp garam masala
  • ½ tsp kashmiri red chilli powder
  • 1 tsp salt
  • coriander leaves / cilantro

For Bati

  • 2 cup Whole wheat Flour
  • 1 cup water
  • 1 cup water
  • ¼ tsp baking powder
  • ¼ tsp salt
  • For Churma
  • ½ cup Whole wheat Flour
  • ½ cup water
  • 6 tbsp ghee / clarified butter
  • 3 tbsp sugar
  • ¼ tsp cardamom powder
  • 5 cashew
  • 5 almond / badam

Instructions
 

  • Preparation
  • Assemble all ingredients together to avoid last minute rush.
  • Wash and chop tomato, onion, green chillies and fresh coriander leaves.
  • Soak chana dal for 30 minutes.
  • Roughly chop cashews and almonds for Choorma.
  • Cooking

For Dal:

  • Add all three dals in a Pressure Cooker and pressure cook for 4 whistles adding 1 tsp ghee and 3 cups of water.
  • In a Kadai, heat 2 tsp ghee and splutter1 tsp cumin, 1 tsp mustard, and pinch hing. Now, add chopped onion followed by 1 tsp ginger garlic paste and chopped green chilli. Saute very well.
  • Then, add chopped tomato and saute well.
  • Also, add turmeric powder, red chilli powder, garam masala and salt. Saute on low flame.
  • At the end, add in cooked dal, 1 cup water and mix well.
  • Let it simmer over low flame and dal absorbs all masala.
  • Sprinkle chopped coriander leaves.
  • Your Dal is ready!

For Bati:

  • Add 2 cup wheat flour, ¼ tsp salt, ¼ tsp baking powder and ¼ cup ghee. In a Mixing Bowl and mix well.
  • Now, add water as required and knead the dough.
  • Pinch a small ball sized dough and roll it nicely and with a fork imprint some lines(to give oven effect) and place the rolled Bati in each mould of Appam Pan.
  • Cover and cook on low flame for 30 minutes from all sides.
  • Your Bati is ready.

For Churma:

  • In a Mixing Bowl, add whole wheat flour, ghee and mix well. The flour should be moist enough to hold easily in your palm.
  • By adding water, knead slightly hard dough than the dough for roti. Keep it rest for 30 minutes.
  • Now, using Rolling Pin and Rolling Board roll the dough into circle (not too thin or thick) and transfer it to the hot Tawa.
  • Cook it for a minute or so over the medium heat and flip over to cook from another side. Now, spread ghee over it and flip again.
  • Then, spread ghee over the flipped side and flipped again. You need to flip the roti for 2-3 minutes to make it crispy. (Do not think twice before spreading ghee here, we need crispy rotis for the Choorma).
  • Prepare 3 – 4 rotis likewise and let them cool down so that you can handle them easily.
  • Now, take a big Mixing Bowl and crush these crispy rotis in it and add powdered sugar and ghee in the Mixing Bowl. Mix well.
  • Now, add chopped almonds and cashews and also the cardamom powder in it.
  • Your Churma is ready.
  • To serve, crush Bati from center and add more ghee on top. Ghee adds more taste and flavor to Bati. Use Homemade Ghee for Dal Bati Choorma Recipe.

Notes & Tips

  • Adding Dry fruits: Adding chopped cashews and almonds is optional.
  • Ghee: This recipe is tasted best when cooked completely in ghee. Avoid using any oil or butter.
  • Add ons: You can serve Dal Bati Churma with choice of pickle and salad.
  • Making Bati: You could make Bati in electric tandoor or oven as well. However, I find Appam Pan, the easiest method.
  • Sugar: You can also use brown sugar in Choorma in place of white sugar. DO NOT add sugar in hot rotis, otherwise sugar will melt leaving the dish soggy.
  • Salt & Spices: Adjust salt and spices as per your taste buds.
