Ingredients
  

  • 8 egg
  • 2 tbsp olive oil
  • 4 to Tomato
  • ¼ capsicum / bell peppers
  • ¼ red bell pepper
  • ¼ capsicum / bell peppers
  • 1 green chillies
  • 2 onions
  • spinach / palak
  • 2 cloves garlic
  • 1 tsp cumin powder
  • ½ tsp salt
  • ¼ tsp Red Chilli Powder
  • ½ tsp black pepper
  • bread

Instructions
 

Preparations

  • Assemble all ingredients to avoid last minute rush.
  • Wash & finely chop garlic, onions, tomatoes, spinach, bell peppers, green chili and spinach.

  • Toast bread for serving.

Cooking

  • Heat oil in Frying Pan and add onions and sauté until they turn golden brown and translucent.

  • Stir in garlic, roasted cumin powder, red chilli powder, salt and cook for 1 minute.
  • Now, add tomatoes, bell peppers, green chilli and spinach, and cook for another 2-3 minutes.
  • Remove Frying Pan from heat and make 8 small holes in vegetable mixture and carefully crack 1 egg into each.
  • Cook eggs properly for 8-10 minutes until running yolk consistency.
  • Sprinkle black pepper and serve hot with bread of your choice.

Notes & Tips

  • Adjusting for spice: If you don’t like spicy food, then can totally skip red chili powder and green chilly. Habaneros are quite potent! So, if you don't want it to be too spicy, consider substituting the habanero pepper with jalapenos, or even just red or green pepper. Just remember to cook the peppers for another minute or two if you decide to do this
  • Choice of Vegetables: You can pick and choose vegetables of your own choice, such as jalapenos, habanero pepper, avocado etc.
