Ingredients
  

  • ½ cup butter, salted at room temperature
  • 1 ½ cup Whole wheat Flour
  • ¼ cup sugar fine powdered
  • ½ tsp salt
  • 3 tsp Carom seeds / ajwain
  • ¼ tsp baking powder
  • 1 tsp cardamom powder
  • 1 tsp fennel seeds powder
  • 2 tbsp milk

Instructions
 

Preparation

  • Assemble all ingredients together to avoid last minute rush.
  • Measure all ingredients as per the list above.

Cooking

  • Take ½ cup salted butter (at room temperature) and ¼ cup sugar, fine powdered in a Mixing Bowl.
  • Mix together both the ingredients with the help of a hand mixture or whisk, so that sugar would incorporate with the butter very well.
  • Then, add 1 ½ Cup whole wheat flour, ½ tsp salt, 3 tsp carom seeds/ajwain, ¼ tsp baking powder, 1 tsp cardamom powder, 1 tsp fennel seeds powder in the Bowl.

  • With your fingers, mix everything well. Do not impatient and speed yup this step. Make sure all the ingredients are well incorporated with each other.
  • You would get crumble texture after mixing. Press some mixture and it should bind together, which means your mixture is perfect for next step.
  • Now, add 2 tbsp milk and gather everything together. Do not knead, just gather the mixture together.

  • Then, roll to cylindrical shape and cover tightly with a cling sheet.
  • Refrigerate for 1 hour so that it can set properly and can easily cut into shapes.
  • After 1 hour, remove the cling sheet and cut into 1 ½ inch pieces. Do not cut too thick otherwise they wont bake properly and take long time for baking.

  • Place in the baking tray and bake at 180°c for 12-15 minutes. The time may vary depending on the brand of Oven and the thickness of biscuits.

  • Let the biscuits remain in oven for 5-6 minutes after the baking time stops. Then, transfer to wired rack and cool down completely. Biscuits would turn crisp after they cooled down.

  • I have used whole wheat flour for the recipe. You can use all purpose flour also in place of wheat flour.
  • I have use butter here for Ajwain Biscuits Recipe, you can use clarified butter/ghee or oil in place of butter. And, if using unsalted butter, add 1 tsp salt for the recipe.
  • Use brown sugar or sugar substitute in place of white sugar, if may required.
  • It can be easily scaled as per the requirement.
  • Store in an air tight container, they are good to go for up to 2 - 3 weeks
